These quick and easy chicken meatballs are so unbelievably mouthwatering you won't believe how healthy they are. A good quality, creamy Bulgarian feta cheese is essential to adding a bit of moisture, saltiness and a ton of flavor to these meatballs as is tangy sun dried tomatoes. Serve over a small bowl of spinach and tomato orzo with wilted spinach and you have yourself a light and satisfying Spring supper. 











Sometimes a girl just needs 10 minutes to herself. With four kids and a husband in the house, something is always happening. There's always an "emergency", chore, task or the constant quarrel going on that needs a referee. Yay. So when I actually lock the bedroom door on rare occasion and get 17 knocks within 10 minutes I start looking for the escape hatch. I'm not even talking about time to read a book or take a nap, (HA!) just a few minutes to dye the grays out of my hair, pluck the cursed granny hairs which have found there way on my chin or any other lovely self maintenance my new 40 year old body needs attention to without an audience. 


I mean, I know that my husband knows that I dye my hair and I'm sure that he's seen a whisker or two on my chin and averted his eyes but there are just some things a girl wants  needs to keep under veil no matter how long she's been happily married. Ya know?



A happy, whisker free, non granny haired mom is a mom that is willing to put home made meatballs on the table for dinner. What's happier and more satisfying than a big, home made, delicious meatball dinner I ask you? Not very many things. Especially when they are stuffed full of my favorite flavors like super fancy and creamy Bulgarian feta cheese and olive oil marinated sun dried tomatoes. Some finely chopped red onion which I think goes much better with ground chicken that white onion and gives it that final touch of Mediterranean flair and of course a hint of garlic powder. So simple yet the flavor goes on and on. 




I was all kinds of giddy when the Sunday Supper Team announced that they were collaborating a ginormous meatball gathering this week. No, not giant meatballs but lots and lots of delicious meatball varieties. Hoooray! A meatball a day for the months to come!









TIME          30 MINUTES               SERVES          4-5



YOU WILL NEED

1 pound lean ground chicken or turkey
6 oz Bulgarin feta
2 tablespoons sun dried tomatoes in olive oil, chopped
1/2 cup real oats such as Coach's Oats
2 whole, Organic, free range eggs
1 teaspoon garlic powder
1/4 cup minced red onion
1/4 teaspoon salt
1/4 teaspoon white pepper

2 cups cooked orzo pasta
1/4 cup fresh lemon juice
2 large handfuls baby spinach, chopped


PUTTING IT ALL TOGETHER

Pre-heat oven to 375F

In a large mixing bowl, combine all ingredients and mix to combine. Using hands, shape into golf ball size balls. Place 1" apart on a seasoned stone baking sheet  or a cookie sheet with parchment paper. Do not use foil.

Meanwhile, cook orzo according to package directions. Add chopped baby spinach during the last 2-3 minutes. Drain and set aside.

Bake at 375F for 20 minutes. Remove from oven and serve on top of cooked orzo.
