Patriotic Ice Cream Cookie Sandwiches



Celebrate this Fourth of July with these Patriotic Ice Cream Cookie Sandwiches. They will make the perfect cool treat for your backyard BBQ. Let the kids help you make them for extra fun!










When the temperature reaches the triple digits the last thing I want to do is turn on the oven. These ice cream cookie sandwiches are one of the very, very few things that I post on this blog that aren't home made or healthy. On special occasions like summer Holiday's it's just fine with me to take it easy and enjoy a cold snack with the kiddos.







 It's so much fun to watch them get giddy with excitement when I pull out a special cold treat for them during summer break. We have to eat them up fast while we sit waist deep in the cool water of our pool before the Sonoran sun melts away our special treat. 


We are down right ice cream licking professionals around here and not a drop escapes our tongues. 







Bake your favorite cookies or use store bought ones. Let the ice cream sit on the counter for about 15-20 minutes stirring once or twice until just slightly soft. Using a spoon, scoop the ice cream onto one cookie and top with another. Put back into the freezer if it is melting for about 30 minutes. Pull out of freezer and sprinkle on colorful sprinkles. Freeze until ready to eat.

The only problem I see here is actually assembling them... because naturally I would start eating the cookies, my kids the ice cream... and we would forget all about the sprinkles... and then no sandwiches for us since we ate all the ingredients before they were put together! They look amazing, and I look forward to trying them out! :)

  12. These are gorgeous! My kids love anything with sprinkles and I love how festive they are for the fourth of July, plus you can expand this idea to practically any holiday by using the appropriate sprinkles, love it!
