Simply Healthy Family: Chunky Applesauce Zucchini Oat Cakes

Chunky Applesauce Zucchini Oat Cakes

Sure you could make a loaf of bread out of these apple cakes but what fun would that be? You can find cute, disposable mini cake baking pans at most craft stores. The kids thought they were getting an extra special treat. Little did they know that they had zucchini in them and very little sugar.

recipe

Today we hit an all time record. It took 1 minute and 49 seconds before one of the darlings got hurt in the pool and we had to all get out sulking, crying and protesting. This is for your information, exactly how much time it takes for me to rub on $2.97 worth of tanning lotion, sit down and put my legs up to get comfortable.

It's a conspiracy I tell you. I mean how many times can a mom say "Don't do cannonballs on your brothers head!" before they get a clue??

recipe

We won't even talked about the 1 out of 3 popped inner tubes, the 2 out of 3 pool balls "accidentally" thrown over the fence or my very nice foam raft I got for mother's day last year which I've used exactly two times and has been used as a slip and slide 74 times since then.

Instead, we are going to talk about cake. Hot out of the oven, old fashioned, chunky applesauce zucchini cake. Cake makes everything better. So does wine, but we're going with cake today.

recipe

I often if not always use applesauce instead of oil in cake recipes but throwing in some chopped up apples definitely made these little cakes a special treat. I'm also known for throwing in shredded vegetables into my muffins and cakes, you know just cuz that's how I roll.

recipe

TIME 45 MINUTES YIELDS 6 MINI CAKES OR 12 MUFFINS

INGREDIENTS

1 3/4 cups all purpose, unbleached flour
1 cup whole grain oats (I always use Coach's Oats)
1/4 teaspoon sea salt
1 1/2 teaspoon apple pie seasoning
1 1/2 teaspoon baking powder
1/2 cup, packed brown sugar
2 whole, Organic, free range eggs
1/2 cup plain, fat free yogurt
1 cup applesauce
1 Gala, Fuji or similar apple
1 zucchini, shredded
1 teaspoon real vanilla

Preheat oven to 350F

In a large bowl, mix flour, oats, salt, cinnamon, and baking powder. In another bowl, mix sugar, eggs, yogurt, applesauce, and vanilla. Stir dry ingredients into wet using a large spoon or a stand mixer until just combined, add chopped apples and zucchini, mix to combine.

Spoon batter into individual baking cups (or large, lightly greased muffin pan) and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from oven and let cool on a baking rack. Serve warm!

  4. OMG, I'm dying laughing, i'm sorry, because all of that story about being out at the pool, is entirely my family, except usually for us it's 20 minutes of getting everyone changed into suits, towels gathered, and down to the pool, vests on etc and approximately 1.5 minutes later my 3 year old has to pee - right after jumping in. EVERY TIME! Anyway, this is such a yummy treat and it can double for breakfast or snack. Am I missing the amount of zucchini needed?

  16. What a great combo. Times like these I wish I worked in an office. I could bake, taste then take. This might just be calorie worthy enough though. :)

  17. This cake is right up my alley. I love baking this way. Your swimmer story is familiar. We had lots of kids in a very tiny pool slide combo last week. It led to some collisions as well. All fun in the sun! I'm defrosting my applesauce and zucchini for this recipe soon!
