Sure you could make a loaf of bread out of these apple cakes but what fun would that be? You can find cute, disposable mini cake baking pans at most craft stores. The kids thought they were getting an extra special treat. Little did they know that they had zucchini in them and very little sugar.
Today we hit an all time record. It took 1 minute and 49 seconds before one of the darlings got hurt in the pool and we had to all get out sulking, crying and protesting. We won't even talked about the 1 out of 3 popped inner tubes, the 2 out of 3 pool balls "accidentally" thrown over the fence or my very nice foam raft I got for mother's day last year which I've used exactly two times and has been used as a slip and slide 74 times since then.
Instead, we are going to talk about cake. Hot out of the oven, old fashioned, chunky applesauce zucchini cake. Cake makes everything better. So does wine, but we're going with cake today.
I often if not always use applesauce instead of oil in cake recipes but throwing in some chopped up apples definitely made these little cakes a special treat. I'm also known for throwing in shredded vegetables into my muffins and cakes, you know just cuz that's how I roll.
TIME 45 MINUTES YIELDS 6 MINI CAKES OR 12 MUFFINS
1 3/4 cups all purpose, unbleached flour
1 cup whole grain oats (I always use Coach's Oats)
1/4 teaspoon sea salt
1 1/2 teaspoon apple pie seasoning
1 1/2 teaspoon baking powder
1/2 cup, packed brown sugar
2 whole, Organic, free range eggs
1/2 cup plain, fat free yogurt
1 cup applesauce
1 Gala, Fuji or similar apple
1 zucchini, shredded
1 teaspoon real vanilla
Preheat oven to 350F
In a large bowl, mix flour, oats, salt, cinnamon, and baking powder. In another bowl, mix sugar, eggs, yogurt, applesauce, and vanilla. Stir dry ingredients into wet using a large spoon or a stand mixer until just combined, add chopped apples and zucchini, mix to combine.
Spoon batter into individual baking cups (or large, lightly greased muffin pan) and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool on a baking rack. Serve warm!
