Happy Cinco de Mayo! Are you celebrating by cooking up your favorite enchiladas or tacos? In our family, that is more commonly on the table than spaghetti and meatballs, in fact my mom was know to make a home made pork chile verde, tortillas, rice and beans and enchiladas for Thanksgiving instead of the usual turkey and stuffing.
I've lived here in Phoenix, AZ. for pretty much my entire life. I didn't appreciate the allure of the desert until I'd traveled around a bit in my young adult life. The mountains are everywhere and they are breathtaking especially in the wee morning hours and in the evening when they turn a magical shade of purple. The Sonoran desert sunsets are something that can not be described with breathtakingly vibrant yellows, reds and oranges only Nature can devise.
