Garden Tomato, Mushroom and Eggplant Lasagna {Gluten Free}



No noodles needed in this hearty vegetable lasagna. You won't miss them or the meat as you go back for seconds. Baked ricotta, mozzarella and Parmesan cheeses along with a spicy marinara sauce will have you singing praises of the eggplant, mushrooms and garden fresh tomatoes in this classic comfort food. Grab a glass of wine, a big spoon, your favorite book and dig in!

There are things about being a mom of  {3}  boys that I quite possibly won't ever understand even though I've had more than 20 years to figure it out. There are the obvious and unvarying occurrences on a daily basis such as the dreaded call from the school principal regarding and not limited to "Your son kicked someone, pushed someone, farted on someone,  fell and broke his arm on the play ground,  slipped and got his arm stuck in the bars of the {child proofed} jungle gym, won't stop being a jokester during class"  to the more interesting and mind boggling, "Your son jokingly talked about setting the movie theatre on fire during the 2nd grade field trip today..." conversations which I will always revere a learning experience as a mother and as a testament to how much patience I have as a human being. 



Then there are, of course the physical aspects of being a boy such as skinned knees, knocked out teeth, Legos shoved up someone else's nose, 23 stitches in the chin from attempting a pop wheelie exactly 5 minutes after removing the training wheels from the bicycle and my personal favorite, the  fall from the bunk bed which resulted in a near death experience which thankfully ended up as "only a concussion which is the good news but the bad news is we found spots on his brain...."

What is it with boys, brothers more specifically that can completely melt a mother's heart one minute and 5 minutes later make her crazy? How is it that they are able to form a camaraderie so loyal and steadfast that even when one of them has broken the sacred bond of brotherhood by defiling the others Lego creation, popsicle stick castle or sabotaged the other in Zombies vs. Aliens that they will unfailingly bail each other out of trouble in a heartbeat? They will stick up for each other in a moments notice and can't seem to be separated from each other for 10 minutes even under penalty of death.

I would be worried about little miss 'M' being the youngest and the only girl except I'm pretty sure that either

a.)  She can hold her own just like her mommy.

b.)  The boys will give into her every time so as not to hear her scream or cry "because then they have to talk about feelings."

or

c.) She's the ring leader and out numbered or not, is more than capable of controlling any situation thrown at her.

Which somehow brings us to comfort food......




With only a few days until the month of May and Mother Nature decides to throw a curve ball at us desert rats. It was so cold and windy, dark and dreary and it rained all day here in Phoenix that we were all caught quite off guard. Left staring out the window with our BBQ mitts and aprons on with a plate full of corn on the cob and hamburger patties not knowing what to do with ourselves. 


On to Plan B!



Noodle-less Lasagna with fresh veggies and lots of cheese!! Sliced thin, eggplant easily takes the place of lasagna noodles and add much more flavor, vitamins and appeal. When baked, Ricotta cheese becomes a pretty fantastic thing becoming almost indulgent. Same goes for slowly baked, plump tomatoes and meaty bella mushrooms. Finish it off with your favorite spicy Marinara, some Mozzarella cheese and freshly shaved Parmesan. Enjoy with a glass of your favorite red wine and enjoy the rain while it's here.

TIME        60 MINUTES          SERVES       6






You Will Need


1 medium size eggplant, peeled and chopped into bite size pieces
3 Roma tomatoes, sliced
1 pint crimini or baby bella mushrooms
2 cups fresh ricotta cheese
1 - 12 ounce jar spicy Marinara sauce
1 cup shredded Mozzarella cheese
1/2 cup freshly grated Parmesan cheese
1 teaspoon salt
1 tablespoon Italian herb blend
cracked black pepper to taste






Preheat your oven to 450F. 

In a deep baking dish add enough Marinara to just cover the bottom. Add eggplant evenly and sprinkle with salt. Add tomatoes and mushrooms and sprinkle with the herbs. Drop the ricotta cheese by spoonfuls around the pan. Pour the Marinara evenly around the pan. Loosely cover with foil and bake for 3-40 minutes. Remove foil and sprinkle with Mozzarella cheese. Bake Uncovered another 8-10 minutes. 


Remove from oven and let cool on a wire rack for at least 10 minutes before serving. 

Serve with a garden salad and sprinkle with freshly shaved Parmesan cheese.

  1. I'm totally relating to all of this. My youngest is a girl and she is definitely the roughest and toughest of the bunch, except she wants to wear boots and a dress while doing all the things her brother can do. Oh, and she does it better. This "lasagna" sounds wonderful. I'm going to try it and see how it goes over with the husband.

  11. A lot of people I love are gluten free and sometimes I get stuck on what to make for them when they are dinner guests, but this looks perfect! eggplant and ricotta is one of my most favorite combinations! YUM!
